One of my favorite fish is walleye. I ran across this recipe that uses only 4 ingredients and I have to tell you the flavorful moist fish that is the result is delicious.

Prep time: 5 minutes Cook time: 35 minutes

INGREDIENTS

2 lbs. walleye fillets

1/2 cup sliced onion

1 tablespoon olive oil

1/2 teaspoon Lawry’s seasoned salt

1/4 teaspoon Morton’s seasoning blend

DIRECTIONS

  1. Pre-heat the oven to 350 F

2. Using a standard baking sheet, cut a piece of foil that is double the size of the sheet pan.

3. Cover the sheet pan with 1/2 of the foil so that the shiny side is down, and dull side up. The idea is to fold the other 1/2 of the foil over the fish and seal to cook.

4. Spread the olive oil on the sheet pan foil.

5. Sprinkle some of the seasoned salt and pepper onto the oiled foil.

6. Lay the walleye fillets in a single layer on top of the seasoned oil.

7. Season the fillets.

8. Slice the onion rings into thin strips and lay them on top of the fillets.

9. Fold the foil over so the fish is completely covered. Roll the ends of the foil, then roll both the sides together to form a pouch.

10. With a sharp knife poke a few holes into the top of the pouch. Be careful not to pierce the bottom of the foil. Place the pan in the oven and bake 30 to 45 minutes.

11. Check the walleye after 30 minutes using a fork to try and flake the thickest part of the fish. It should flake easily and be white. If you see any translucent color or if the fillets don’t easily flake, put back in the oven and cook 10-15 minutes longer.

Serve with your choice of sides.
