This is an easy dish to prepare and ready in about 30 minutes.
INGREDIENTS
3 cloves garlic, minced
1 small onion, minced
handful of fresh spinach roughly chopped
red yellow, orange mini peppers , sliced
1/2 lb shrimp
1/2 lb boneless chicken thighs ( chop into bite size pieces)
1 bottle vodka sauce
1 lb penne pasta
handful of flat leaf parsley, finely chopped
Fresh Parmesan cheese, grated
EVOO
4 tablespoons butter
salt
pepper
1/2 tsp red pepper flakes
DIRECTIONS
- Place a large pot of salted water on stove to boil
- Peel and finely chop onion. Heat evoo in a large deep skillet, add 2 tablespoons butter, when it foams add garlic. Add peppers, cook until softened. Add vodka sauce and red pepper flakes. Add chopped spinach. Lower heat to simmer.
- Cook penne pasta about 8 minutes. Reserve one cup of the water.
- In a seperate skillet add a tbsp evoo and chicken, cook until chicken done.
- Cook shrimp in 2 tbsp butter until opaque.
- Drain pasta, add to sauce with cup of reserved water.
- Stir to combine all ingredients. Top with fresh grated parmesan cheese.
- Serve with parsley on top.
Serve with a salad if desired! Enjoy!!!
