This is an easy dish to prepare and ready in about 30 minutes.

INGREDIENTS

3 cloves garlic, minced

1 small onion, minced

handful of fresh spinach roughly chopped

red yellow, orange mini peppers , sliced

1/2 lb shrimp

1/2 lb boneless chicken thighs ( chop into bite size pieces)

1 bottle vodka sauce

1 lb penne pasta

handful of flat leaf parsley, finely chopped

Fresh Parmesan cheese, grated

EVOO

4 tablespoons butter

salt

pepper

1/2 tsp red pepper flakes

DIRECTIONS

  1. Place a large pot of salted water on stove to boil
  2. Peel and finely chop onion. Heat evoo in a large deep skillet, add 2 tablespoons butter, when it foams add garlic. Add peppers, cook until softened. Add vodka sauce and red pepper flakes. Add chopped spinach. Lower heat to simmer.
  3. Cook penne pasta about 8 minutes. Reserve one cup of the water.
  4. In a seperate skillet add a tbsp evoo and chicken, cook until chicken done.
  5. Cook shrimp in 2 tbsp butter until opaque.
  6. Drain pasta, add to sauce with cup of reserved water.
  7. Stir to combine all ingredients. Top with fresh grated parmesan cheese.
  8. Serve with parsley on top.

Serve with a salad if desired! Enjoy!!!
