This is so delicious you will forget it is healthy. The beauty of the mold is very pretty when prepared in a glass bowl. You can also use a 6-cup mold and unmold it before serving. For easy removal, spray the mold with a vegetable spray before pouring in the jello.

INGREDIENTS

  • 1 box (6 oz) raspberry jello
  • 1 cup raspberries, fresh or frozen
  • 1 pkg. (3 oz) cream cheese softened
  • 1/2 cup sour cream
  • 1/3 cup coarsely chopped walnuts
  • 1 carton (6oz) raspberry yogurt
  • Whipped cream and sprig for garnish

DIRECTIONS

  1. Prepare gelatin according to directions. Pour half into a 1 1/2 quart dish, preferably glass. Chill until thickened like egg whites, about 30 minutes.
  2. Stir in raspberries (thawed) and return to the refrigerator.
  3. Combine cream cheese, sour cream, and nuts in a small bowl. When the jello in the bowl is completely set spread the cream cheese mixture evenly over the top: cover and chill
  4. Combine the remaining jello with the raspberry yogurt and pour it over the cream cheese mixture. Cover and chill for 4 hours or longer. Garnish with the whipped cream and mint sprig.
