These healthy burgers are tasty and take little time to prepare.

INGREDIENTS

BURGERS

1 lb. salmon

1 packed cup ( roughly chopped, as is if using baby spinach)

2 oz. feta cheese , crumbled

1 1/2 tbsp. lemon juice

pepper

SAUCE

1/2 avocado

4 tbsp. sour cream

4 tsp. lemon juice

1 clove garlic, minced

To Serve

whole wheat buns

INSTRUCTIONS

  1. Remove the skin from the salmon and ensure there are no bones. Cut into chunks, approx. 2 inch cubes. Put the salmon and spinach into the food processor and process until combined and broken up, but not mush.
  2. Transfer to a bowl, if easier, add the crumbled feta, lemon juice, and a generous grinding of pepper. Mix until the cheese is well spread through the mix and form into six burgers. Lay on a tray to firm up in the fridge for a little while before cooking.
  3. Cook either on the grill or in a skillet with a little oil for 3 minutes each side or until golden brown and cooked through.
  4. While they are cooking, make the sauce… mash the avocado and mix with the sour cream, lemon juice and garlic.
  5. Toast the buns, spread with a thin layer of the avocado cream before topping with the burger. May be served as an open sandwich.
