INGREDIENTS

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 bone-in skin-on chicken thighs
  • 1 teaspoon thyme
  • 1 teaspoon seasoning blend
  • 1 teaspoon dried parsley
  • Kosher salt and fresh ground pepper
  • 2 cups texmati brown rice
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme

For caramelized apples and onions:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large sweet onion, slices
  • 1 Granny Smith apple, peeled and sliced
  • 1 Gala apple peeled and sliced

INSTRUCTIONS

  1. Heat butter and olive oil in skillet over medium high heat
  2. Sprinkle chicken with thyme, seasoning blend, parsley, salt and pepper
  3. Place chicken in skillet (skin side down) and let brown without moving for 5-6 minutes or until lightly browned
  4. Remove from pan and add rice, garlic, and thyme to remaining oil and butter
  5. Let brown while stirring for 2-3 minutes
  6. Transfer rice to slow cooker and stir in broth
  7. Add chicken on top, cover, and cook on low for 5-7 hours or high for 2.5 – 3.5 hours
  8. When fully cooked stir rice well, if not fully cooked, add 1/2 cup water and continue to cook on high for 15-30 minutes.

For caramelized apples and onions:

  1. Heat butter and olive oil in skillet over medium high heat
  2. Add onion and cook for 6-8 minutes, stir occasionally
  3. Add apples and continue to cook for 6-8 minutes or until apples and onions are browned and tender
  4. Serve with chicken and rice
